Vinification
First fermentation happens in stainless steel. The subsequent re-fermentation in tanks according to the long Charmat method and the moderate dosage (5.5 g/L residual sugars) preserve the varietal aroma of the grapes.

Refinement
The base wine ages on the lees for three months, then it referments in an autoclave and stays there for a month, in the bottle for about six months.

Tasting
Modern sparkling wine of the Tyrrhenian Coast, fresh and fruity cut. Nose notes of acacia honey, citrus and herbs. The taste has a balance based on freshness and minerality that facilitate drinking. Vermentino contributes to the bouquet and body while Bellone and Bombino give dynamism and verticality.

Pairings
Perfect as an aperitif, it goes well with raw seafood appetizers, shellfish and fried vegetables.
