This wine is dedicated to the ancient inhabitants of our cellars carved into the tuff: excavating have been found many traces of prehistoric elephants.

Vinification

Fermentation in separate stainless steel for the three varieties. Malolactic fermentation in cement. Assembly in mid-January and bottling in February.

Refinement

In cement tanks with micro-oxygenation, then in bottle for 2 months.

Tasting

Intense ruby red colour with light purplish nuances. Young wine with a vinous and fruity character, it opens with notes of sour cherry and red berries. Good structure and balance with well-dosed tannins and a savory finish.

Pairings

It is served with appetizers of cold cuts and cheeses, rustic pâtés or on the classic amatriciana and first courses with meat sauce. It goes well with main courses such as pork with milk, grilled meats, mixed boiled meats. It also accompanies hard cheeses.
