Dedicated to the ancient prehistoric elephants who lived in Torre in Pietra: several fossils were found during the restoration works in the early 20th century to enlarge the cellar’s tuff caves.

Vinification
The three varieties are harvested and vinified separately, refined on the fine lees for two months and then be assembled by the end of December.
Refinement
In stainless steel tank, then in bottle for 3 months.
Tasting
A classic of the Castle of Torre in Pietra with a fresh and unmistakable style. The nose is fine and lively expression of our terroir that reflects the proximity of the sea. In the mouth it is pleasant and easy to drink with a savory and iodised finish.
Pairings
As an aperitif or on delicate appetizers, both sea and earth. It can be easily combined with light preparations of fish and vegetables. Also ideal with white meats and fresh cheeses.
