Mediterranean interpretation of Fiano, an ancient Roman variety historically present in Latium, named after the ancient mythological forest that protects the castle and refers to the woods that surround the vineyards.

Vinification

When fully ripe, the grapes are harvested by hand, in crates. The unstemmed bunches are gently pressed in an inert atmosphere. After cold decantation, the must ferments at a controlled temperature.

Refinement

The wine ages partly in cement for 6 months with weekly suspension of the fine lees, partly in French oak tonneaux with regular batonnage. Maturation is completed in the bottle for another 2 months.

Tasting

It has a golden-yellow color, the scents are enveloping and elegant, with a particular citrus note and the typical varietal scent of hazelnut, complemented by a touch of salt and mineral. On the palate, the fruit is ripe, with citrus returns, for a fresh and structured sip with a long and savoury finish. Macchia Sacra is a harmonious wine, which can evolve and acquire complexity over time.

With seafood dishes, but also tagliatelle with porcini mushrooms, truffle risotto, noble poultry, rustic cakes and cheeses
