Pratolungo is the result of the spontaneous fermentation and brief maceration of this native Lazio variety. It thrives in sandy soils, nurtured by the sea breeze and surrounded by the olive trees and aromatic herbs that encompass the vineyard.

VINIFICATION
Manual harvesting of the finest clusters allows for spontaneous fermentation. The wine stays in contact with the skins until the “cap rises.” After a few days of contact, the tank is racked, and the must continues its slow fermentation in stainless steel.
REFINEMENT
The wine ages in cement tanks on its noble lees for approximately 8 months. Subsequent bottle aging encourages the development of complex notes over time. It is bottled after only a coarse filtration, without undergoing clarification or micro-filtration.
TASTING
Its beautiful color is a result of the brief skin maceration. It expresses a wealth of aromas, ranging from white flowers and citrus to Mediterranean scents. Fresh, lively, and savory, featuring marine mineral notes derived from its terroir and an elegant tactility from the skin contact. The entry is delicate, followed by a pleasant savory trail that elongates the sip and a return of the aromatic bouquet on the finish.
