A rosé sparkling wine interpretation from Sangiovese and Cesanese, with good structure and just the right softness.

Vinification

After the direct pressing of the two varieties and the first fermentation in steel, the subsequent refermentation takes place in pressurized tanks according to the Charmat method with a moderate dosage.

Ageing

The base wine ages on the lees for three months, then it re-ferments in pressurized tanks for one month and it remains an additional 2 months in the tank on the lees with regular batonnages.

Tasting

A rosé sparkling wine with notes of small red fruits and a delicately floral bouquet, it has good structure and returns a balance of fresh-mineral components vs residual sugar. The Sangiovese contributes to its acidity and aromatic finesse.

Pairings

Perfect as an aperitif, but also great pairing for meals and on gourmet pizzas.
