From the late-August night thinning of our hillside vineyards, the grapes are macerated on the skins for just one night and thus the base wine is made. Bottle re-fermentation takes place with the addition of frozen Cesanese must, then-following the so-called Scacchi method-without the addition of exogenous sugars.
Refinement
The base matures on the lees for months and then, as there is no disgorgement after the second fermentation, it continues to age in the bottle on the lees. This is why it occurs naturally with the base.
Tasting
Lively sparkling rosé, cheerful, energetic, fresh and well balanced. On the nose there are initially hints of bread crust then fresh crisp red berry fruit: raspberry, currant and strawberry.
Pairings
Ideal as an aperitif, but also to be paired with the whole meal.
